Sweet potato fries with avocado dip

Sweet Potatoes

2-3 Sweet Potatoes (skin on)

Olive Oil

1/2 tsp Chili Powder

1/2 tsp Coriander

1 tsp Paprika



Avocado Dip

1 Avocado

1 Lime

1/3 Cup Cream Cheese

1/3 Cup Mayonaise

1 Jalapeno Pepper

2 Scallions



Cut sweet potatoes into strips and arrange in a pan. Pour olive oil over them, then sprinkle on chili powder, coriander, paprika, salt, and pepper. Use your hands to mix them all together so they are all well coated. Bake on 450 degrees on bottom rack for approximately 20 minutes, then on top rack for approximately 10 more minutes until crispy.

While those are cooking, mix avocado, lime juice, cream cheese, mayo, jalapeno (with or without seeds, depending on how spicy you want it), scallions, and salt in food processor.

My Take

These are phenomenal and so easy to make. The coriander on the sweet potatoes really adds great flavor, while the sauce is slightly spicy and full of flavor. They pair perfectly together and make a great appetizer or side for any meal.
